I’m eating another serving of the asparagus/artichoke egg casserole with turkey bacon – very convenient and tasty.
I’m working from home so I had the time to make this easy sausage and peppers for lunch
The house smells a bit like I ordered s pizza 🙂

At first I thought there was no way this makes 4-5 servings, but I quartered it, leaving each serving with 5 pieces of sausage. I’m glad I chose to include the optional sweet onion. It’s a fine amount of food if there’s s side salad or something

I didn’t have a cast iron skillet and didn’t want to chance it with another skillet so I transferred to a Pyrex pie dish before baking. I also substituted pre sliced kalamata olives for the green olives.
Here it is, out of the oven – kinda stewed in its juices and hummm… the feta didn’t melt at all
Again, I’m not a fan of stewed tomatoes and I thought the chicken breast was much too thick. I’ve gotten used to the thin sliced breasts.
I served mixed baby spinach with baby spring mix with cucumber and sliced grape tomatoes
I’ve packaged up the leftovers to revisit for lunch tomorrow
I’ve done way too many dishes for only 2 days to show for it
