There are so many ways to prepare eggs!
I was inspired by the South Beach Diet recipe for Eggs Benedict, but it calls for an artichoke bottom instead of an English muffin and also has a recipe for mock hollandaise sauce. I didn’t want to have to deal with the artichoke bottom – if it was fresh I would have to cook and prep – if it was canned I would have a bunch of leftovers – so I skipped it. Other recipes suggest including a tomato slice – but I think I’ve had a lot of tomatoes.
I thought I might as well keep it simple and live without hollandaise – mock or otherwise.

I simply had my poached eggs on top of my grilled Canadian bacon. Admittedly, I ended up with runny yoke all over my plate in the end, but that’s ok. It ended up taking 5 minutes to prep and only like 3 to eat.
I’m pretty happy with my egg poacher – I’ve finally learned how to get the eggs out of the little cups for a nice looking presentation. I also enjoy smoked salmon (lox) benedict, so I’ll try poached eggs with lox at some point.
For lunch today, I’ve got the salmon I grilled last night while I was grilling the steak. I had wrapped it in foil and refrigerated overnight. I steamed some fresh asparagus tips and laid down some butter lettuce on my plate with the remainder of baby mixed greens from previous meals. I recalled a Salmon Cobb Salad I liked from the Wild Fox Restaurant so I microwaved a piece of turkey bacon until crispy and added that to the mix. I started hard boiling an egg, but was too impatient to let it cook. I suppose I’ll eat the egg as a snack. I left the Salmon cold, but I suppose it would be good warmed up as well.
Others have variations on this theme – I’m not the first to make a salad from Salmon and Asparagus. I’m getting by with just fresh lemon squeezed on top instead of dressing

Well, it’s a Friday and my tradition is to go to Cafe Zazzle and have fish tacos. Lucky for me, they are very accommodating and substitutions aren’t an issue. I had them “protein style” and ordered two. I was about dubious about all the avocado since I had it last night… maybe too much of this good fat? I only ate half the avocado. The chipotle aioli is another questionable ingredient along with the sauce on the slaw. I only picked st the coleslaw and baked beans and ate the grilled Tillapia with a fork instead of taco style with the lettuce wrap
Some may think that having fish twice on one day is a lot – but hey, if it’s going to be done… it’s best on a Friday and oh by the way… it’s Lent
I missed my glass of Pinot which I normally enjoy with my fish tacos. Instead I had iced tea.
